Nutritious Energy Balls

Ingredients

  • 1 cup gluten-free rolled oats

  • 1/2 cup shredded desiccated coconut

  • 1/2 cup almond butter (or peanut butter)

  • 3 tbsp maple syrup

  • 1/4 cup chia seeds

  • 1/4 cup flax seeds

  • 1/2 cup shredded desiccated coconut

  • 1 tbsp SoulFresh Proteins Spirulina Powder

  • 1 tsp vanilla extract

  • pinch sea salt

  • coconut flakes on top (optional)

Instructions

  1. Add rolled oats, desiccated coconut, macadamia nuts, dates, chia seeds and salt to a food processor and process. It will start off crumbly and then as you keep processing it will gradually start sticking to the sides. Stop and scrape down the sides and keep going a bit longer until the mix starts to clump together slightly.

  2. Add in the almond butter (or peanut butter) and process while the machine is running.

  3. Next add in the maple syrup. The mixture should start to clump together very well.

  4. Roll into 1-1.5 inch diameter balls (aim for around 20 balls) and place them onto a parchment lined baking tray.

  5. Place into the freezer for 15 minutes or so for the balls to get nice and firm, thereafter keep them stored in the fridge.
